These almond flour space brownies are the peak of nostalgia! They’re gluten-free, dairy-free, plant-based, and free of artificial dyes.

Remember cosmic brownies? A fudgy little brownie with a delicious ganache topping and of course, sprinkles! I loved cosmic brownies and created an AIP version a few years back. I recently revisited this classic to make it totally plant-based, and this version may be even fudgier 😉

The Ingredients for Cosmic Brownies

  • Almond flour, tapioca starch and cocoa powder.
  • Coconut oil. 
  • Maple Syrup. 
  • Almond Butter. The almond butter makes these brownies super rich!
  • Unreal Crispy Quinoa Gems. These are the star of the show! I’ve loved Unreal Gems for years, and love snacking on these quinoa gems. I am so excited to be partnering with them on this recipe! They’re dairy free and are naturally colored with beetroot juice and spirulina… no artificial dyes here!

How to make Almond Flour Space Brownies

  • Combine the batter until smooth. 

  • Bake the brownies. Allow the brownies to bake through and cool.

  • Make the frosting and add the candy gems. To make the frosting, using a double boiler, melt the chocolate chips and coconut cream together, stirring until melted and well incorporated. Allow to cool slightly. Carefully pour the ganache over the brownies, evenly spreading over the brownies. Once the ganache is cool to the touch, place the unreal gems all over the brownies.

  • Chill, slice, and enjoy!

Tips & Tricks

  • Let the brownies fully cool and lightly chill! Cosmic brownies are not meant to be eaten warm either way, but these especially need to chill! Both the frosting needs to be set, and the brownies themselves need to be chilled.

Storage Instructions

These brownies can be stored in the fridge in a glass container for 4 days. I freeze the extras and they freeze well!

Ingredients

For the brownies

  • 2 tbsp ground flaxseeds
  • 6 tbsp water
  • 3 tbsp coconut oil, melted
  • 1/3 cup creamy almond butter
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/3 cup cocoa powder
  • 3/4 cup almond flour
  • 2 tbsp tapioca starch
  • 1 tsp baking powder
  • Pinch of salt

For the topping


Instructions

  1. Preheat the oven to 350 F and line an 8×8″ brownie pan with lightly greased parchment paper.
  2. Using a large mixing bowl, combine the ground flax and water. Allow to sit for 5 minutes. Add the coconut oil, almond butter, coconut sugar, maple syrup and vanilla. Stir until fully combined.
  3. Add the cocoa powder, baking powder, tapioca starch, almond flour and salt to the wet ingredients and stir until a batter forms.
  4. Pour the batter into the prepared baking dish, using a spatula to evenly spread. Transfer to the oven and bake for 30 minutes or until baked through. Remove from the oven and allow to cool completely.
  5. To make the frosting, using a double boiler, melt the chocolate chips and coconut cream together, stirring until melted and well incorporated. Allow to cool slightly.
  6. Carefully pour the ganache over the brownies, evenly spreading over the brownies. Once the ganache is cool to the touch, place the unreal gems all over the brownies.
  7. Transfer the brownies to the fridge for an hour to allow them to fully set and lightly chill. Slice into 9 slices and serve chilled, storing leftovers in the fridge.

Notes

These brownies also freeze well! Wrap them tight and freeze for up to a month.
