Apple Bacon Guacamole

I was never much of a guacamole person when I went out to restaurants… mostly because I could never have it as I don’t tolerate nightshades! Of course, I love avocado and make my own at home often, but I missed out on the experience of having guacamole at restaurants. That is until I had the guacamole at Picnik Austin which is totally AIP! What I really love about their guacamole is that it’s made with diced apple for just a hint of added sweetness and texture.

I loved the idea of apples in guacamole so much, that I decided to make my own version and uplevel it even more with fresh chopped bacon! Apple and bacon are a match made in heaven, and as you would guess, it’s heavenly in guacamole too. Honestly, there’s not beating the guac at Picnik Austin, but this version comes close.

This guacamole is made without any nightshades and has the perfect balance of fresh, citrus, and lightly sweet flavors from the lime and apple, and savory flavors from the avocado, red onion and bacon.

How to make apple bacon guacamole

  1. Using a high-speed blender, blend the avocado, avocado oil, lime juice, salt, pepper, and garlic until creamy. Remove from the blender and spoon into a bowl.
  2. Mix in the remainder of the ingredients (reserving some for topping) and stir well. Top off the guacamole with the additional ingredients for garnish.
  3. Serve with plantain chips, grain-free chips, or fresh veggies for dipping.

What’s the best way to store guacamole?

Of course, guacamole is best fresh, but if you’re going to be making it ahead of time and bringing it with you, here are my tips…

  • Wrap it airtight. More air means more oxidation.
  • Store it with the pit. I add the avocado pit to the center of the guacamole if I’m saving it for later. This really does help keep it fresh.
  • Add extra lime juice. I add extra lime juice to the top to keep it from browning.

What should you serve with this guacamole?

  • Plantain chips. Artisan Tropic is my fav!
  • Siete tortilla chips. For a grain-free chip (non-AIP).
  • Sliced veggies. Carrots, celery, and cucumber all pair well with this guacamole and add a lot more freshness.

Avocado and lime

Of course!

Avocado oil

I like to add avocado oil to guacamole and blend it in a blender. This makes for creamier guacamole rather than a chunky one, but you can for sure just mash it if you prefer that.

Cooked bacon

I add two strips of bacon, but you can scale up or down.

Apple

I like pink lady apple in the guacamole.

Red onion

This adds just a bit of a kick!

Ingredients

  • 1/4 cup avocado oil
  • 1 clove garlic, minced
