Applesauce Pound Cake {Gluten-free, Paleo, Egg-free}

Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 2 tbsp golden flaxseed meal
  • 2 tsp baking powder
  • 1/4 cup applesauce
  • 1/4 cup maple syrup
  • 1 cup almond milk (sub another dairy-free milk)
  • 1/3 cup melted ghee
  • 1 tsp vanilla extract
  • 2 tbsp organic powdered sugar (optional for topping, not paleo)

Instructions

  1. Preheat the oven to 350 F and grease a loaf pan, or line with parchment paper.
  2. Using a large bowl, combine the almond flour, coconut flour, flaxseed meal and baking powder. Stir until fully incorporated.
  3. Add the applesauce, maple syrup, almond milk, ghee and vanilla extract. Stir to combine. The batter will be moist but firm, and the texture somewhere between a dough and a batter.
  4. Add the batter to the loaf pan, and use a spatula to evenly flatten. Bake in the preheated oven for 50 minutes or until the top of the cake is golden brown, and a toothpick can be inserted and comes out clean.
  5. Carefully transfer to a cooling rack and allow to cool for 20 minutes before topping with optional organic powdered sugar and slicing and serving.
