Description
This simple salad is a great way to get the health benefits of sardines!
Ingredients
Scale
For the dressing
- 2 tbsp olive oil
- 2 tsp red wine vinegar (or apple cider vinegar)
- 1/2 tsp sea salt
- 1/4 tsp black pepper (omit for AIP)
For the salad
- 2 cups arugula
- 1/4 cup carrots, shredded
- 2 radishes, sliced
- 1/4 cup strawberries, sliced
- 1/2 small avocado, sliced
- 1 4 oz can of sardines
Instructions
- Combine the ingredients for the dressing and whisk well. Season further to taste.
- Assemble the salad by layer all of the ingredients over the arugula.
- Top with dressing and enjoy!
