This simple salad is a great way to get the health benefits of sardines!

Ingredients

For the dressing

  • 2 tbsp olive oil
  • 2 tsp red wine vinegar (or apple cider vinegar)
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper (omit for AIP)

For the salad

  • 2 cups arugula
  • 1/4 cup carrots, shredded
  • 2 radishes, sliced
  • 1/4 cup strawberries, sliced
  • 1/2 small avocado, sliced
  • 1 4 oz can of sardines

Instructions

  1. Combine the ingredients for the dressing and whisk well. Season further to taste.
  2. Assemble the salad by layer all of the ingredients over the arugula.
  3. Top with dressing and enjoy!
