Remove the steak from the fridge and season well with salt and pepper. Allow to sit on the counter for 8-10 minutes.
While the steak sits, combine the coconut aminos, lime juice, coconut sugar, and arrowroot starch. Whisk well and set aside.
Add the avocado oil to a large pan and set to medium-high heat. Once hot, add the steak bites and cook for 3-4 minutes on each side or until browned. Set aside.
Add the garlic and ginger to the pan and cook for 2 minutes or until fragrant.
Pour in the coconut aminos mixture and stir. Allow to thicken for 2-3 minutes. Add the steak bites back in and stir to coat until the steak reaches it's desired doneness.
Serve topped with sesame seeds and green onion with a side of your choice.
