Grilled Sweet Potato Fries

Ingredients

  • 1 large sweet potato
  • 3 tbsp maple syrup
  • 1 tsp apple cider vinegar
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper (omit for AIP)
  • 1 tsp paprika (omit for AIP)
  • 2 tbsp avocado oil
  • 2 tsp fresh chives

Optional dip

  • 1/4 cup coconut yogurt
  • 1 tsp garlic powder
  • 1 tsp fresh chives

Instructions

  1. Preheat the grill (or grill pan) on medium heat.
  2. Wash and scrub the sweet potato well, and slice it into fries about 1/4″ in diameter.
  3. Add the maple syrup, apple cider vinegar, and seasonings to a bowl and combine. Add the sweet potato fries to the bowl and toss to combine until fully coated.
  4. Brush the fries and the grill surface with avocado oil and place the fries onto the grill. Grill on each side for about 7-8 minutes or until cooked through and crisp.
  5. Remove from the grill and serve topped with chives with a dip.
