For the elderberry syrup
- 1 cup dried elderberries
- 4 cups water
- 2 sticks cinnamon
- 1 thumb ginger, peeled
- 1/2 cup – 1 cup honey (adjust to taste)
For the gummies
- 1 cup elderberry syrup
- 2 tbsp gelatin
Instructions
- To make the elderberry syrup, add the dried elderberry, cinnamon and ginger to a pot and cover it with the water. Bring to a boil and reduce to a simmer for 45-60 minutes, or until the liquid is reduced by about half.
- Remove the cinnamon and ginger and allow to cool before mashing the berries with a potato masher or spoon to pull out any extra juices.
- Strain through a fine mesh strainer into a glass or jar. Once totally cool add the honey to taste and stir well. Save the syrup in the fridge for 2 months.
- To make the gummies, add 1 cup of the syrup to a pot. Sprinkle 2 tbsp of gelatin over the syrup and allow to harden.
- Transfer the pot to the stove and heat over low heat for 3-4 minutes or until fully liquid.
- Use a dropper to carefully transfer the liquid into a mold. Alternatively, you can use a large glass container. Transfer to the fridge for 4 hours or until fully set.
- Carefully remove from the mold and store in glass in the fridge for 1-2 months.
Notes
To make this recipe vegan, you would swap out gelatin for agar. Agar is a lot stronger than gelatin, so you need to divide the amount of gelatin by three, and then you’ll have the amount of agar needed! This comes out to 2 tsp of agar.
