Orange Jello Slices {alcohol free}

Ingredients
  

  • 2 oranges
  • ½ cup pineapple juice sub mango juice or more orange juice
  • 2 tbsp gelatin
  • 1 tbsp honey optional

Instructions
 

  • Wash the oranges well and slice them in half. Use a citrus juicer (or your hands) to carefully squeeze the juice, taking care not to break the orange skin. Transfer the juice to a measuring cup. You should have 1/2 cup of juice. Add the pineapple juice. If you have under a cup of juice, add extra pineapple juice. You should have 1 cup of juice at the end.
  • Working with one orange half at a time, very carefully insert a serrated spoon (or a regular spoon) into the white part of the orange to pull back the inside of the orange. Once separated, use your fingers to carefully pull out all of the flesh of the orange, leaving just the shell. Set the inside of the orange aside and save it to add to a smoothie. Repeat with all of the orange halves, until you have four halves.
  • Pour the juice into a pot and add honey (if using). Sprinkle the gelatin over the liquid and lightly mix. Allow to harden for 2-3 minutes. Transfer the pot to the stove and heat over low heat for 3-4 minutes or until fully liquid. Allow to cool slightly.
  • Add the orange halves to small ramekins to help keep them stable and pour in the juice. Transfer to the fridge and allow to set for 3-4 hours or until totally solid.
  • Once solid, slice the oranges and serve chilled!
