What is Taco Dip?

Taco dip is party magic! Seriously, who doesn’t like taco dip? Taco Dip is a layered dip with ingredients like guacamole, sour cream (or cream cheese), beans, salsa, lettuce, cheese, and a protein like ground beef or chicken. Dip in some corn chips and you’ve got a seriously delicious appetizer.

This taco dip is a paleo and AIP version of the classic made without dairy, legumes, grains, or nightshades. It layers guacamole, ground beef, a sour cream, and classic topping that all taste amazing paired with plantain chips!

How to Make Paleo and AIP Taco Dip

  • Brown the ground beef: Using a large pan, brown the ground beef over medium heat. Lightly season with salt, pepper, and half of the onion and garlic powder. Set aside and drain the excess fat.
  • Make the guacamole: by mashing the avocado with the lime juice. Add half of the red onion, 1 tbsp of cilantro, salt, pepper, and the remainder of the garlic and onion powder and stir well. Season further to taste and set aside.
  • Make the “sour cream”: by mixing together the coconut yogurt, mayo, and apple cider vinegar. Set aside.
  • Assemble the taco dip: by adding the guacamole to the bottom of the serving dish. Top with ground beef. Spread the “sour cream” over the ground beef. Finish the dip by topping with lettuce, black olives, and the remainder of the cilantro.

Can you make this taco dip with chicken?

Yes! Shredded cooked chicken would be a great option instead of beef in this taco dip if that’s what you prefer.

Can you make the taco dip ahead of time?

This taco dip is best fresh, but if you do need to make it ahead of time, I would store the components separately and assemble when you’re ready to serve to keep it all fresh.

The Ingredients You’ll Need

Avocado & lime

It wouldn’t be taco dip without avocado! These are the main ingredients to make easy guacamole.

Ground beef

I love using ground beef because it’s cost-effective and easy! It tastes great in this dip, but you can also use other proteins of your choice.

Coconut yogurt & mayo

This what you’ll use to make a dairy-free sour cream. For AIP, you’ll just omit the mayo or use a compliant mayo.

Shredded lettuce, black olives, red onion, and cilantro

You can also add other toppings like diced tomato or jalapeno if you tolerate them.

Ingredients

  • 1 lb ground beef
  • 1 tsp sea salt, divided
  • 1/2 tsp black pepper, divided (omit for AIP)
  • 2 tsp garlic powder, divided
  • 2 tsp onion powder, divided
  • 2 medium avocados
  • Juice of one lime
  • 1/2 red onion, diced
  • 3 tbsp fresh cilantro, divided
  • 1/2 cup coconut yogurt (like this)
  • 1/4 cup compliant mayo (sub for more yogurt for AIP)
  • 1 tsp apple cider vinegar
  • 1 cup lettuce, shredded
  • 1/3 cup black olives, sliced

Instructions

  1. Set aside a large casserole dish or baking dish of your choice.
