Description

This single-serve pumpkin cookie is perfect for satisfying your sweet tooth! It’s paleo, and vegan-friendly.


Ingredients

  • 1/3 cup almond flour
  • 2 tsp arrowroot starch
  • 1/2 tsp ground flaxseed
  • 1/4 tsp pumpkin pie spice
  • 1/8 tsp baking powder (I like this one)
  • 1 tbsp pumpkin puree
  • 1 tbsp maple syrup
  • 1 tbsp dairy-free chocolate chips (I like the enjoy life brand)
  • Pinch of flakey sea salt

Instructions

  1. Preheat the oven to 350 F and line a small baking sheet with lightly greased parchment paper.
  2. Combine the almond flour, arrowroot, ground flaxseed, pumpkin pie spice, and baking powder in a medium-sized mixing bowl. Fold in the maple syrup, pumpkin puree, and chocolate chips and stir until a dough forms.
  3. Add the dough to the baking sheet. Slightly flatten the cookie and form it into a large, round cookie. Add some extra chocolate chips on top if desired.
  4. Bake in the preheated oven for 10 minutes or until baked through. Allow to cool slightly before carefully transferring to a cooling rack to completely cool.
  5. Serve topped with a pinch of flakey sea salt.
