Taco Casserole

Tater tot taco casserole? Heck yes! Sign me up for anything that has everything I love about tacos and tater tots. I love a comforting casserole, but it can be hard to make casseroles that are egg-free and dairy-free. Shredded cheese and eggs usually bind a casserole together, and they can be a little lackluster without them. You may be missing casseroles if you’re egg and dairy-free, but I’ve got you covered! Topping casseroles off with tater tots really ties it all together!

So if you’re looking to jazz it up from your usual tacos or taco salads, this is it! This casserole is great for a special weekend dinner or serving at a gathering like a gameday party. This recipe is dairy-free, egg-free, paleo, and can be made AIP when removing the nightshade ingredients.

How to make This Tater Tot Taco Casserole

  • Using a large skillet, brown the ground beef over medium heat and season with dried seasonings and lime juice. Use a wooden spoon to crumble. Once browned, drained the excess fat and add to a 9″x7″ (or 8×8″) casserole dish. Set aside.
  • Preheat the oven to 375 F. Add the tater tots to the top of the beef, arranging in even rows. Transfer to the oven and allow to bake for 5-8 minutes to allow the tots to reheat.
  • Remove from the oven and top the casserole with desired toppings such as red onion, black olives, avocado, cilantro, green onion, and lime. Serve fresh.

Can you use store-bought tater tots? Or do you have to make them from scratch?

You can totally use store-bought tater tots if you tolerate them as a great option to save time! However, I also have a recipe for homemade sweet potato tots if you can’t find any store-bought tots that you tolerate.

Can you use other meats instead of beef?

Personally, I think ground beef is the best option for this casserole. It’s cheap, it’s easy, and it ties together the taco flavor. However, if you prefer something like ground turkey or shredded taco-seasoned chicken, you can do that as well.

How to store this recipe if you make it ahead of time

If you do choose to make this recipe ahead of time, make sure to keep the toppings off and add them to serve to keep them fresh. You can simply store it in the fridge in the same baking dish (if totally cooled) or transfer it to glass and cover it tightly. You’ll want to reheat it in the oven until warm.

  • 1 lb ground beef
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp dried oregano
  • 1 tsp cumin (omit for AIP)
  • 12 tsp chili powder (adjust to taste, omit for AIP)
  • 3/4 tsp sea salt
  • 1/4 tsp black pepper (omit for AIP)
  • Juice of half a lime
  • 1 batch prepared sweet potato tater tots (you should have about 25 tots)
  • 1/4 cup red onion, chopped
  • 1/4 cup black olives, sliced
  • 1/4 cup tomato, diced (omit for AIP)
  • 1 avocado, sliced
  • 1 tbsp cilantro, chopped
  • 1 tbsp green onion, chopped
  • Lime wedges to serve
