Description

This sweet potato tater tot taco casserole is a decadent and comforting casserole made with tots, taco seasoned beef, and all of the taco fixings you love! This recipe is paleo, gluten-free, and can be made AIP.

Ingredients

Scale
  • 1 lb ground beef
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp dried oregano
  • 1 tsp cumin (omit for AIP)
  • 12 tsp chili powder (adjust to taste, omit for AIP)
  • 3/4 tsp sea salt
  • 1/4 tsp black pepper (omit for AIP)
  • Juice of half a lime
  • 1 batch prepared sweet potato tater tots (you should have about 25 tots)
  • 1/4 cup red onion, chopped
  • 1/4 cup black olives, sliced
  • 1/4 cup tomato, diced (omit for AIP)
  • 1 avocado, sliced
  • 1 tbsp cilantro, chopped
  • 1 tbsp green onion, chopped
  • Lime wedges to serve

Instructions

  1. Using a large skillet, brown the ground beef over medium heat and season with dried seasonings and lime juice. Use a wooden spoon to crumble. Once browned, drained the excess fat and add to a 9″x7″ (or 8×8″) casserole dish. Set aside.
  2. Preheat the oven to 375 F. Add the tater tots to the top of the beef, arranging in even rows. Transfer to the oven and allow to bake for 5-8 minutes to allow the tots to reheat.
  3. Remove from the oven and top the casserole with desired toppings such as red onion, black olives, avoado, cilantro, green onion, and lime. Serve fresh.
