- 1 medium avocado
- Juice of half a lemon
- Salt and pepper to taste (omit pepper for AIP)
- 1 tsp garlic powder
- 1 5 oz can of tuna
- 1/4 pink lady apple, diced
- 1/4 cucumber, diced
- 1/4 red onion, diced
- 1 tbsp green onion, chopped
- 2–3 grain-free tortillas (I use Siete foods almond flour tortillas)
Instructions
- Using a large bowl, add the avocado and top with lime juice and seasonings. Mash the avocado until soft and no large chunks remain.
- Add the tuna to the avocado and flake to break up the tuna into small pieces.
- Add the apple, cucumber, red onion, and green onion and stir to combine and coat with avocado. Set aside.
- Lay a tortilla flat onto a clean surface and add 2-3 spoonfuls of the tuna salad to the center of the tortilla. Roll into a tight wrap. Carefully slice into pinwheels, and repeat with the rest of the tuna salad.
- Serve immediately or store in glass Tupperware in the fridge for a day.
