Avocado Tuna Salad Pinwheels

Ingredients

  • 1 medium avocado
  • Juice of half a lemon
  • Salt and pepper to taste (omit pepper for AIP)
  • 1 tsp garlic powder
  • 1 5 oz can of tuna
  • 1/4 pink lady apple, diced
  • 1/4 cucumber, diced
  • 1/4 red onion, diced
  • 1 tbsp green onion, chopped
  • 23 grain-free tortillas (I use Siete foods almond flour tortillas)

Instructions

  1. Using a large bowl, add the avocado and top with lime juice and seasonings. Mash the avocado until soft and no large chunks remain.
  2. Add the tuna to the avocado and flake to break up the tuna into small pieces.
  3. Add the apple, cucumber, red onion, and green onion and stir to combine and coat with avocado. Set aside.
  4. Lay a tortilla flat onto a clean surface and add 2-3 spoonfuls of the tuna salad to the center of the tortilla. Roll into a tight wrap. Carefully slice into pinwheels, and repeat with the rest of the tuna salad.
  5. Serve immediately or store in glass Tupperware in the fridge for a day.
