Bison Stuffed Sweet Potatoes

Ingredients
  

  • 2 Sweet Potatoes
  • 1 lb Ground Grass-fed Bison
  • 1 tbsp cooking fat Tin Star Food Ghee is great if you can tolerate it, but coconut oil works and is AIP
  • ½ tsp sea salt
  • 1 tsp fresh cilantro

Instructions
 

  • Preheat oven to 415 F
  • Pierce sweet potatoes about an inch long towards the middle
  • Add to oven and bake for 30 minutes or until soft (everyones oven is different)
  • While sweet potatoes have about 10 minutes left, add cooking fat to pan
  • Add bison to pan and stir and watch
  • Add salt, fresh cilantro and extra cooking fat as needed
  • Cook until browned and remove from heat
  • Remove sweet potatoes from oven and slice down the middle
  • Fill potatoes with bison
  • Top with a bit of fresh cilantro
  • Serve and enjoy
