Preheat oven to 415 F
Pierce sweet potatoes about an inch long towards the middle
Add to oven and bake for 30 minutes or until soft (everyones oven is different)
While sweet potatoes have about 10 minutes left, add cooking fat to pan
Add bison to pan and stir and watch
Add salt, fresh cilantro and extra cooking fat as needed
Cook until browned and remove from heat
Remove sweet potatoes from oven and slice down the middle
Fill potatoes with bison
Top with a bit of fresh cilantro
Serve and enjoy
