Ingredients

- 2 Sweet Potatoes
- 1 lb Ground, Grass-fed Bison
- 1 tbsp cooking fat (Tin Star Food Ghee is great if you can tolerate it, but coconut oil works and is AIP)
- 1/2 tsp sea salt
- 1 tsp fresh cilantro
Instructions
- Preheat oven to 415 F
- Pierce sweet potatoes about an inch long towards the middle
- Add to oven and bake for 30 minutes or until soft (everyones oven is different)
- While sweet potatoes have about 10 minutes left, add cooking fat to pan
- Add bison to pan and stir and watch
- Add salt, fresh cilantro and extra cooking fat as needed
- Cook until browned and remove from heat
- Remove sweet potatoes from oven and slice down the middle
- Fill potatoes with bison
- Top with a bit of fresh cilantro
- Serve and enjoy
