Coconut Kale Smoothie Bowl | Autoimmune Paleo and Gut Healing


Ingredients

Scale
  • 34 large kale leaves, destemed
  • 2 frozen peach slices
  • 1 cup coconut milk
  • 1 tbsp coconut oil
  • 1 tbsp collagen hydrolysate
  • 3 ice cubes
  • Juice from 1/4 lemon
  • Optional Topping
  • 1/2 banana sliced
  • 1 tbsp coconut flakes

Instructions

  1. Add the kale and coconut milk to the blender (vitamin, ninja, nutribullet, etc) and blend until smooth
  2. Add other ingredients and blend until smooth and all frozen chunks are broken up
  3. Pour smoothie into a bowl (or cup if preferred)
  4. Add toppings as desired
  5. Eat with a spoon and enjoy!
