Description
This Greek Chicken Souvlaki is a healthy and delicious take on the classic, perfect for summertime grilling! It is paleo, AIP, Whole30 and keto-friendly.
Ingredients

- 1/4 cup olive oil (sub avocado oil)
- Juice of one large lemon
- 4 cloves garlic, minced
- 1 tbsp parsley, chopped
- 2 tsp dill, chopped
- 2 tsp onion powder
- 1 tsp oregano
- 3/4 tsp sea salt
- 1/4 tsp black pepper (omit for AIP)
- 1 lb chicken breast, cubed
Instructions
- If you’re using bamboo skewers, soak in water for an hour to avoid burning.
- Prepare the marinade by whisking the oil, lemon, and seasonings together. Add the chicken to a bowl and pour the marinade over. Chill in the fridge for at least one hour.
- After the chicken has marinated, skewer the chicken breast on the skewers and set aside.
- Prepare the grill top (either using an outdoor grill or a stove top cast iron grill pan) by lightly greasing with oil and bring to a high heat.
- Add the skewers to the grill and grill for 2-3 minutes on each side. Rotate until the chicken is fully grilled and the internal temperature reads 165 F.
- Serve with sides of your choice like cauliflower rice, tzatziki sauce, etc.
