  • ¼ cup olive oil sub avocado oil
  • Juice of one large lemon
  • 4 cloves garlic minced
  • 1 tbsp parsley chopped
  • 2 tsp dill chopped
  • 2 tsp onion powder
  • 1 tsp oregano
  • ¾ tsp sea salt
  • ¼ tsp black pepper omit for AIP
  • 1 lb chicken breast cubed

Instructions

  • If you're using bamboo skewers, soak in water for an hour to avoid burning.
  • Prepare the marinade by whisking the oil, lemon, and seasonings together. Add the chicken to a bowl and pour the marinade over. Chill in the fridge for at least one hour.
  • After the chicken has marinated, skewer the chicken breast on the skewers and set aside.
  • Prepare the grill top (either using an outdoor grill or a stove top cast iron grill pan) by lightly greasing  with oil and bring to a high heat.
  • Add the skewers to the grill and grill for 2-3 minutes on each side. Rotate until the chicken is fully grilled and the internal temperature reads 165 F.
  • Serve with sides of your choice like cauliflower rice, tzatziki sauce, etc.
