  • Author: Michelle
  • Total Time: 1 hour 10 minutes
  • Yield: 4 servings 1x

Description

This Greek Chicken Souvlaki is a healthy and delicious take on the classic, perfect for summertime grilling! It is paleo, AIP, Whole30 and keto-friendly.

Ingredients

Scale
  • 1/4 cup olive oil (sub avocado oil)
  • Juice of one large lemon
  • 4 cloves garlic, minced
  • 1 tbsp parsley, chopped
  • 2 tsp dill, chopped
  • 2 tsp onion powder
  • 1 tsp oregano
  • 3/4 tsp sea salt
  • 1/4 tsp black pepper (omit for AIP)
  • 1 lb chicken breast, cubed

Instructions

  1. If you’re using bamboo skewers, soak in water for an hour to avoid burning.
  2. Prepare the marinade by whisking the oil, lemon, and seasonings together. Add the chicken to a bowl and pour the marinade over. Chill in the fridge for at least one hour.
  3. After the chicken has marinated, skewer the chicken breast on the skewers and set aside.
  4. Prepare the grill top (either using an outdoor grill or a stove top cast iron grill pan) by lightly greasing  with oil and bring to a high heat.
  5. Add the skewers to the grill and grill for 2-3 minutes on each side. Rotate until the chicken is fully grilled and the internal temperature reads 165 F.
  6. Serve with sides of your choice like cauliflower rice, tzatziki sauce, etc.
