Ingredients
1lbpeachespeeled and sliced (I use defrosted frozen peaches)
Add the peeled peaches to a blender or food processor along with the orange juice. Blend until fully liquid. Using a fine mesh strainer set over a medium pot, strain out the juice using a silicone spatula to push down the pulp. You should have about 1 1/4 cups of juice after straining.
Pour the juice into a pot and add the honey. Stir well.
Sprinkle the gelatin over the peach mixture and lightly mix. Allow to harden for 2 minutes.
Transfer the pot to the stove and heat over low heat for 3-4 minutes or until fully liquid.
Use a dropper to carefully transfer the liquid into the mold. Alternatively, you can use a large glass container.
Transfer to the fridge for 4-6 hours or until fully set.
Carefully remove from the mold. Add the sweetener to a bowl and carefully toss the gummies (see notes). Store in the fridge!
Notes
The monk fruit sweetener is the closest look and feel to regular sugar, but it melts if you keep it in the fridge! If you do add the sweetener, just keep in mind that it won’t keep the same texture in the fridge for longer storage. All nutritional information are estimations and will vary.
