- 1 cup coconut milk
- 1/4 cup chia seeds
- 1 tbsp honey
- 1/3 cup basmati rice, cooked and cooled
- 1/2 mango, diced
- 2 tbsp shredded coconut
Instructions
- Combine the coconut milk, chia seeds, and honey in a bowl and whisk well to combine. Cover and transfer to the fridge, allowing it to set for several hours or overnight or until thickened.
- Add the basmati rice to the prepared chia pudding and stir to break up the rice into the chia pudding.
- Divide the chia pudding between two small dessert cups and top with diced mango and shredded coconut. Serve fresh, mixing to stir in the mango.
