Ingredients
Scale
- 1/3 cup of warm water
- 2 tsp matcha powder (I use this, and I use 2 packets!)
- 1 1/2 cup coconut milk
- 2 tsp golden coconut sugar (sub honey)
- 1 cup fresh pineapple
- 1/2 cup ice (plus extra for the glasses)
For the rims of the glasses
- 1 tbsp honey
- 2 tbsp toasted shredded coconut
Instructions
- To prepare the matcha, add the warm water to a glass and pour the matcha over. Use a milk frother or whisk to combine the matcha until fully combined. Set aside.
- Using a blender, combine the coconut milk, coconut sugar, pineapple, and ice. Blend until fully combined.
- If you’d like to decorate the rims of the glasses, add the honey and the toasted coconut to two separate small plates. Place the glass rim side down and turn to coat in the honey and then the toasted coconut, coating the rim. Repeat with both of the glasses.
- Fill the glasses about halfway with crushed ice. Dividing between the two glasses, pour the pineapple coconut milk over the ice, and then top it off with matcha.
- Serve fresh and enjoy!
