Description
These paleo ground beef quesadillas are a grain-free and dairy-free take on a classic. They’re easy to make on a stovetop!
Ingredients

- 1 lb ground beef
- 2 cloves garlic, minced
- 1/2 onion, diced
- 2 tsp dried cilantro
- 2 tsp dried oregano
- 1 tsp chili powder (omit for nightshade free)
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- Juice of half a lime
- 2 tbsp avocado oil
- 4 Siete Foods Almond Flour Tortilla’s (sub other grain free tortillas)
- 1/2 cup + 3 tbsp dairy free queso (use Siete foods, or use this for a nut-free and dairy-free queso option)
To garnish:
- 2 tbsp fresh cilantro, chopped
- 2 tbsp green onion, chopped
To serve:
- Salsa of your choice
- Guacamole of your choice
Instructions
- Using a large pan, add the ground beef along with the garlic, onion, and seasonings. Crumble with a wooden spoon and brown thoroughly. Remove from the pan when browned and the onions are cooked. Clean out the pan.
- If needed, quickly microwave (or heat in a pan) the tortillas to soften them and make them easier to fold without breaking.
- Heat the avocado oil in a pan and add the softened tortilla. Carefully add about 1/3 cup of the cooked beef and about 3 tbsp of queso to one side of the tortilla (amount will vary depending on the size of the tortilla). Use a spatula to fold the tortilla in half. Cook for about 2 minutes on one side to crisp. Carefully flip and cook for another 2-3 minutes or until crisped to your liking. Remove from the pan and transfer to a plate. Continue with the remainder of the tortillas.
- Once the quesadillas are all cooked, slice each one in half. Top with fresh cilantro and green onion and serve with salsa and guacamole on the side.
