Pink Lemonade Gummies


Ingredients

  • 2 cups watermelon, cubed
  • 3/4 cup + 2 tbsp lemon juice
  • 3 tbsp honey
  • 3 1/2 tbsp gelatin

Instructions

  1. Add the cubed watermelon to a blender or food processor along with the lemon juice. Blend until fully liquid. Using a fine mesh strainer set over a medium pot, strain out the juice using a silicone spatula to push down the pulp.
  2. Add the honey to the juice and whisk well. Sprinkle the gelatin over the juice mixture and lightly mix. Allow to harden for 2 minutes.
  3. Transfer the pot to the stove and heat over low heat for 3-4 minutes or until fully liquid.
  4. Use a dropper to carefully transfer the liquid into the mold. Alternatively, you can use a large glass container.
  5. Transfer to the fridge for 4-6 hours or until fully set. Carefully remove from the mold and store in the fridge for up to 4-5 days!
