Chicken Souvlaki {with An Easy Marinade!}

Ingredients

  • ¼ cup olive oil sub avocado oil
  • Juice of one large lemon
  • 4 cloves garlic minced
  • 1 tbsp parsley chopped
  • 2 tsp dill chopped
  • 1 ½ tsp onion powder
  • 1 tsp oregano
  • ¾ tsp sea salt
  • ¼ tsp black pepper omit for AIP
  • 1 lb chicken breast cubed

Instructions

  • If you're using bamboo skewers, soak in water for an hour to avoid burning.
  • Prepare the marinade by whisking the oil, lemon, and seasonings together. Add the chicken to a bowl and pour the marinade over. Cover and chill in the fridge for at least one hour, or overnight.
  • After the chicken has marinated, skewer the chicken breast on the skewers and set aside.
  • Prepare the grill top (either using an outdoor grill or a stove top cast iron grill pan) by heating it on medium-high and brushing with oil.
  • Add the skewers to the grill and grill for 2-3 minutes on each side. Rotate until the chicken is fully grilled and the internal temperature reads 165 F.
  • Transfer to a plate and allow to rest. Serve as a pita wrap with a gluten-free pita and tzatziki if desired, or serve on a plate with rice or cauliflower rice and fresh vegetables like cucumber and red onion.

Notes

If you choose to pan-fry, I recommend using a grill pan for grill marks.
If you choose to air-fry, I recommend starting at 400 F and cooking for 15-18 minutes, flipping halfway through. Be sure to check the internal temperature before serving!
