Wash and scrub the sweet potato well, and slice it into fries about 1/4" in diameter.
Add the maple syrup, apple cider vinegar, and seasonings to a bowl and combine. Add the sweet potato fries to the bowl and toss to combine until fully coated.
Brush the fries and the grill surface with avocado oil and place the fries onto the grill. Grill on each side for about 7-8 minutes or until cooked through and crisp.
Remove from the grill and serve topped with chives with a dip.
