Sweet Potato Tater Tot Taco Casserole

This sweet potato tater tot taco casserole is a decadent and comforting casserole made with tots, taco seasoned beef, and all of the taco fixings you love! This recipe is paleo, gluten-free, and can be made AIP.

Ingredients

  • 1 lb ground beef
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp dried oregano
  • 1 tsp cumin omit for AIP
  • 1-2 tsp chili powder adjust to taste, omit for AIP
  • ¾ tsp sea salt
  • ¼ tsp black pepper omit for AIP
  • Juice of half a lime
  • 1 batch prepared sweet potato tater tots you should have about 25 tots
  • ¼ cup red onion chopped
  • ¼ cup black olives sliced
  • ¼ cup tomato diced (omit for AIP)
  • 1 avocado sliced
  • 1 tbsp cilantro chopped
  • 1 tbsp green onion chopped
  • Lime wedges to serve

Instructions

  • Using a large skillet, brown the ground beef over medium heat and season with dried seasonings and lime juice. Use a wooden spoon to crumble. Once browned, drained the excess fat and add to a 9"x7" (or 8x8") casserole dish. Set aside.
  • Preheat the oven to 375 F. Add the tater tots to the top of the beef, arranging in even rows. Transfer to the oven and allow to bake for 5-8 minutes to allow the tots to reheat.
  • Remove from the oven and top the casserole with desired toppings such as red onion, black olives, avoado, cilantro, green onion, and lime. Serve fresh.
