1cupJapanese sweet potatobaked and frozen (see notes)
½cuporange segmentspeeled
¾cupfull fat coconut milk
¼cuporange juice
½tspvanilla extract
Instructions
Add all of the ingredients to a high speed blender and blend until totally smooth. Add an extra splash of coconut milk if your blender needs a bit of help.
Pour the frosty into two glasses and serve cold!
Notes
To bake the Japanese sweet potato, peel and chop the sweet potato and bake at 400 F for about 25-30 minutes or until tender but not crispy. Remove from the oven and allow to cool completely before freezing.
