Ingredients

- 8 medjool pitted dates
- 3 tbsp cocoa powder
- 3 tbsp almond flour
- 1 ½ tbsp coconut oil, softened
- ½ tsp peppermint extract
- ½ tsp vanilla extract
- Optional- 4 GF chocolate cookies
Instructions
- Remove the pits from the dates and add them to a food processor along with the cocoa powder, almond flour, coconut oil, peppermint and vanilla. Blend until fully combined into a sticky paste. Remove and clean out the food processor.
- Scoop the mixture into 9-10 truffles and roll into small balls. Set aside.
- If using, add the cookies to the food processor and crush into small crumbs. Roll the truffles in the cookie crumbles and place in the fridge for an hour to set.
- Enjoy the truffles chilled!
