Thin Mint Truffles (Gluten & Dairy free)

Ingredients

  • 8 medjool pitted dates
  • 3 tbsp cocoa powder
  • 3 tbsp almond flour
  • 1 ½ tbsp coconut oil, softened 
  • ½ tsp peppermint extract 
  • ½ tsp vanilla extract
  • Optional- 4 GF chocolate cookies

Instructions

  1. Remove the pits from the dates and add them to a food processor along with the cocoa powder, almond flour, coconut oil, peppermint and vanilla. Blend until fully combined into a sticky paste. Remove and clean out the food processor. 
  2. Scoop the mixture into 9-10 truffles and roll into small balls. Set aside.
  3. If using, add the cookies to the food processor and crush into small crumbs. Roll the truffles in the cookie crumbles and place in the fridge for an hour to set.
  4. Enjoy the truffles chilled!
