BBQ Jackfruit

Ingredients

  • 14 oz can of jackfruit
  • 2 tbsp avocado oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper (omit for AIP)
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp chili powder (omit for AIP)
  • 2 tsp coconut sugar (omit for whole30)
  • 1/2 cup compliant BBQ sauce (see notes)
  • 2 tbsp green onion, chopped

Instructions

  1. Drain the can of jackfruit to remove any excess liquid.
  2. Using a large pan, heat the oil over medium heat. Add the jackfruit and season with salt, pepper, garlic, onion, chili powder (optional), and coconut sugar. Stir well to coat and cook for 2-3 mintes to soften.
  3. Add the BBQ sauce and stir well to coat. Simmer for another 3-4 minutes.
  4. Serve topped with diced green onion.

Notes

For a whole30/ paleo BBQ sauce, use the new primal or homemade sauce. For AIP use KC naturals or homemade.
