Caramel Apple Rice Paper Rolls

Ingredients

  • 2 apples, peeled and diced (granny smith, or Honeycrisp)
  • 1 tbsp coconut sugar
  • 1 tsp arrowroot
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 1012 sheets of rice paper
  • 12 tbsp ghee or coconut oil
  • Caramel sauce

Instructions

  1. Using a medium bowl, combine the apples, coconut sugar, arrowroot, lemon juice and cinnamon. Toss to fully coat.
  2. Working with one piece of rice paper at a time, dip it into the water to lightly soften. Add the rice paper to a plate and allow to sit for about a minute to further soften.
  3. Spoon about 1/4 cup of the apple into the center of the rice paper. Roll the rice paper by folding in the two corners, then folding up the bottom edge and rolling it into a tight spring roll. Set aside and repeat for all of the rice paper. Prep another sheet of rice paper, and double-wrap the roll. Set aside and repeat for all of the ingredients.
  4. Using a large pan, heat the coconut oil or ghee over medium-low heat. Add a few rice paper rolls to the pan at a time (making sure not to overcrowd the pan).
  5. Sear the rolls for about 3-4 minutes on each side or until crispy. Set aside on a plate.
  6. Serve topped with caramel sauce!
