Dairy Free Chocolate Easter Bunnies

Ingredients

Scale
  • 1/2 cup dairy-free chocolate chips
  • 2 tsp coconut oil
  • 1 tsp vanilla extract
  • 3 tbsp freeze-dried strawberries, crushed
  • Pinch of sea salt

Instructions

  1. Combine the chocolate chips and coconut oil in a bowl. Microwave for 30 seconds, remove and stir. Repeat, microwaving in 30-second intervals, and stir until melted. Stir in the vanilla extract. Alternatively, you can melt in a double boiler.
  2. Add your bunny mold to a plate and carefully spoon the chocolate into the mold until all spaces are filled. Use a food scraper to run across the top of the mold to even out the chocolate if needed.
  3. Sprinkle the crushed strawberries and salt over chocolate.
  4. Transfer to the fridge for at least an hour (or more depending on the size of your mold) to allow to harden.
  5. Carefully remove from the mold and serve chilled.

Notes

If you don’t have a food scraper, you can use the flat edge of a spatula.

To make AIP, follow this recipe I have for gelt! All you have to do is follow this recipe with a different mold and add freeze-dried strawberries.
