Easy Vanilla Coffee Jelly {Dairy Free}

For the coffee jelly

  • 1 tbsp + 2 tsp gelatin
  • 1 cup brewed coffee
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

For the milk

  • 2 cups almond milk
  • 2 tsp maple syrup
  • 1/2 tsp vanilla extract

Instructions

  1. To make the jelly cubes, add 1 cup of the coffee to a pot along with the maple syrup. Gently stir to combine. Sprinkle the gelatin over the coffee and allow it to harden.
  2. Transfer the pot to the stove and heat over low heat for 3-4 minutes or until fully liquid. Remove from the heat and add the vanilla
  3. Use a dropper to carefully transfer the liquid into a mold. Alternatively, you can use a large glass container. Transfer to the fridge for 4 hours or until fully set.
  4. Carefully remove from the mold and divide the jelly among two glasses.
  5. Make the flavored milk by combining the milk, maple syrup, and vanilla. Pour the milk over the jelly cubes and serve with a spoon!
