Italian Lemon Cream Soda (Dairy Free)

Ingredients

For the almond syrup

  • 1/2 cup water
  • 1/2 cup coconut sugar
  • 2 tsp almond extract

For the cream soda

  • Ice
  • Juice of one lemon
  • 23 tsp syrup (adjust to taste)
  • 8 oz carbonated water
  • 3 tbsp almond milk

Instructions

  1. To make the almond syrup, add the water and coconut sugar to a small saucepan. Whisk and bring to a simmer, stirring often for about 5 minutes. The sugar should be totally dissolved. Remove from the heat and stir in the almond extract. Allow to cool before transferring to a jar. Store in the fridge for 2 weeks. 
  2. To make the soda, add about ¼ cup of ice to a glass. Pour in 2 tsp of the syrup into the glass along with the juice of one lemon, carbonated water, and almond milk. Stir well to combine. Taste and add more syrup if desired! Serve chilled.
