This Italian Lemon Cream Soda is the easiest and most refreshing fancy drink you can make at home! It’s dairy-free and alcohol-free, and both kids and adults will love it.

- It’s sweetened with a homemade almond syrup. This is how you’d traditionally enjoy a lemon soda in Italy, with almond syrup for an added pop of flavor without being overly sweet. You can save the almond syrup to serve with more sodas, add it to lattes, etc! It’ll stay fresh in the fridge for about 2 weeks.
- It’s so easy to make. The longest part of the process is making the syrup, but even then, it’s super simple to make. Once you have syrup on hand, you can throw the drink together whenever you want in less than 5 minutes.
The Ingredients for Italian Lemon Cream Soda
- Water, Coconut Sugar, and Almond Extract. These ingredients make the homemade almond syrup, which is so delicious in this recipe, but could be used in others as well.
- Almond milk. You can technically use any plant based milk! Full fat coconut milk is creamier, but it will impact the flavor a lot more than almond milk. Oat milk is another great choice.
- Ice and Carbonated Water.
- Lemon Juice. This really is best if squeezed fresh from a lemon, not bottled.

- Step One. Make the almond syrup.
- Step Two. Make the soda by adding ice, syrup, lemon juice, carbonated water, and almond milk together and enjoy!
Tips & Tricks
- Save the syrup. The syrup makes a lot of extra for more drinks like lattes, more sodas, etc! Save it in the fridge for up to 2 weeks.
- Adjust the sweetener to taste. I really prefer this drink to be more tart, but when I share it with my toddler, I add some extra syrup. It’s totally up to you and very easy to adjust the sweetener!
- Scale the drink up for more. You can easily double or triple the recipe to share!

Ingredients
For the almond syrup
- 1/2 cup water
- 1/2 cup coconut sugar
- 2 tsp almond extract
For the cream soda
- Ice
- Juice of one lemon
- 2–3 tsp syrup (adjust to taste)
- 8 oz carbonated water
- 3 tbsp almond milk
Instructions
- To make the almond syrup, add the water and coconut sugar to a small saucepan. Whisk and bring to a simmer, stirring often for about 5 minutes. The sugar should be totally dissolved. Remove from the heat and stir in the almond extract. Allow to cool before transferring to a jar. Store in the fridge for 2 weeks.
- To make the soda, add about ¼ cup of ice to a glass. Pour in 2 tsp of the syrup into the glass along with the juice of one lemon, carbonated water, and almond milk. Stir well to combine. Taste and add more syrup if desired! Serve chilled.
