Healthy Orange Creamsicle Smoothie {without banana!}

Ingredients

  • 1 cup cauliflower (steamed and frozen)
  • 1 cup frozen peaches
  • 1/2 cup yogurt (I use coconut yogurt)
  • 3/4 cup fresh orange juice
  • 1/4 cup coconut milk
  • 1/3 tsp Vanilla extract
  • 2 tsp Honey (optional)
  • 1/4 cup fresh coconut whipped cream (optional)
  • Zest of half an orange

Instructions

  1. Using a large blender, combine the cauliflower, peaches, yogurt, orange juice, vanilla extract, and honey. Blend on high until fully blended and creamy. Add additional coconut milk if a thinner smoothie is desired.
  2. Pour into a tall glass and serve topped with whipped cream and orange zest.
