- 1 cup cauliflower (steamed and frozen)
- 1 cup frozen peaches
- 1/2 cup yogurt (I use coconut yogurt)
- 3/4 cup fresh orange juice
- 1/4 cup coconut milk
- 1/3 tsp Vanilla extract
- 2 tsp Honey (optional)
- 1/4 cup fresh coconut whipped cream (optional)
- Zest of half an orange
Instructions
- Using a large blender, combine the cauliflower, peaches, yogurt, orange juice, vanilla extract, and honey. Blend on high until fully blended and creamy. Add additional coconut milk if a thinner smoothie is desired.
- Pour into a tall glass and serve topped with whipped cream and orange zest.
