Paleo Chicken Bacon Ranch Wraps

Description

These paleo chicken bacon ranch wraps are a delicious and classic lunch option made paleo, grain-free, and AIP-friendly!


Ingredients

Scale
  • 2 tbsp avocado oil
  • 2 Siete burrito sized tortillas 
  • 6 oz cooked chicken breast, chopped
  • 3 slices bacon, chopped
  • 3/4 cup romaine lettuce, chopped
  • 1/4 cup shredded carrots
  • 810 grape tomatoes, halved (omit for AIP, sub more carrots or lettuce)
  • 1/4 ranch dressing (use this for AIP and this for paleo)

Instructions

  1. Lightly heat the two burrito tortillas over 2 tbsp of avocado oil in skillet as instructed on the package to make them easier to fold. Set aside.
  2. Add about half of each of the ingredients to one tortilla, being careful not to overfill (see notes). Roll the wrap by folding up the bottom edge about a third of the way, then folding in the two corners, and rolling the wrap tightly. Repeat.
  3. Carefully slice the wrap and serve fresh, or store in the fridge for about 1 day.

Notes

As for overfilling the burrito, the exact measurements of each burrito filling will vary depending on the size of your vegetable cuts, how large your chicken pieces are, how tight you roll the burrito etc. Just keep eyeballing it, and remember you can start over!
