Paleo Shamrock Shake Smoothie (AIP, Dairy Free)

Ingredients

  • 1 cup frozen peaches
  • 1/2 banana, frozen
  • 1 cup fresh spinach
  • 1/2 small avocado
  • 2 tbsp fresh mint leaves
  • 1/2 cup crushed ice
  • 1 1/4 cup coconut milk
  • 1 tbsp honey (optional)

For topping

  • Whipped coconut cream
  • Dairy-free chocolate chips (sub carob chips for AIP)

Instructions

  1. Using a high-speed blender, blend the smoothie ingredients (reserving the honey) until smooth. After blended, taste and add honey if more sweetener is desired.
  2. Pour the shake into one large cup (or two smaller cups) and top with whipped coconut cream and chocolate chips. Serve immediately.
