Ingredients

  • 3 bartlett pears
  • 1 tbsp ghee melted (sub coconut oil for AIP)
  • Juice of quarter lemon
  • ½ tsp cinnamon
  • ¼ tsp ground ginger
  • 1 tbsp honey sub maple syrup
  • 2 tbsp coconut sugar

Instructions

  • Preheat the oven to 350 F and lightly grease a baking dish with coconut oil. Set aside.
  • Slice the pears in half and use a spoon to scoop out the seeds.
  • Add the pears to the baking dish, skin side down and flesh side up. Top the pears with lemon juice, cinnamon, ginger, honey, and coconut sugar. Rotate the pears, flipping a few times to coat all sides of the pears with the toppings. Place the pears cut side down, and skin side up and transfer to the oven.
  • Bake uncovered for 20-25 minutes or until the pears are soft. Serve slightly warm with a side of coconut whipped cream or ice cream if desired.
