Pour the ice into a cocktail shaker. Add the brewed espresso, coconut water, coconut milk, bitters, and vanilla simple syrup.
Put the lid on the cocktail shaker and shake vigorously for 45-60 seconds with both hands.
Pour the prepared mocktail into a cocktail glass.
To make the foam, pour the creamer into a small glass and froth with a milk frother for 30-45 seconds or until thick. Pour over the espresso martinin mocktail.
Serve immediately topped with coffee beans for garnish!

The froth on top is optional! You can also make a cold foam of your own with coconut cream and some vanilla syrup. The amount of bitters that you use will depend on your taste or preference. Add about 2-3 to start and increase to your liking.Some bitters will have alcohol, but it's a very low amount. We're talking about drops versus entire shots, so it's up to you how much you want to use or what variety. This one does not have alcohol!
