Ginger Fruit Popsicles

These ginger fruit popsicles are the perfect easy and anti-inflammatory summer treat! They're made with fresh fruit, lemonade, and fresh ginger for a lower-sugar treat.

  • 1 ½ cup lemonade see notes
  • ½ cup water
  • 1 thumb ginger peeled and grated, see notes
  • 1 kiwi peeled and sliced
  • ½ peached sliced
  • 1-2 strawberries sliced

Instructions

  • Combine the water, lemonade and grated ginger. Whisk well to combine.
  • Using a popsicle mold, press 2-3 slices of fruit to the side of the wall of popsicle mold, varying the fruit for each mold.
  • Pour the liquid to the top of the popsicle mold, leaving just a small amount of space at the top.
  • Add the popsicle sticks and covers onto the mold and place in the freezer overnight, or until fully frozen.
  • Run the mold under warm water for a few seconds to loosen the popsicles before pulling out of the mold and enjoying!

Notes

A note about the lemonade: If you want a lower-sugar option, you can use lemon water instead! 
Adjusting the ginger to taste: I like to use a larger thumb of ginger, but if you're sharing with kids who don't like the ginger flavor as much, you can use a smaller thumb of ginger.
