This mango chia pudding is the perfect naturally sweet, high-fiber breakfast or snack. It's dairy-free and made with whole, fresh mango.

  • Fresh mango cubed
  • Toasted coconut

Instructions

  • Add the coconut yogurt, almond milk, mango and vanilla to a food processor (or blender). Blend until you get a thick liquid and no larger chunks of mango remain.
  • Pour the liquid into a large baking dish or glass bowl and add the chia seeds. Whisk well to combine, making sure there are no large clumps.
  • Cover and transfer to the fridge. Allow to set for 3-4 hours or until thick.
  • Serve by itself or topped with fresh mango and toasted coconut if desired!
