One Pan Sausage & Vegetables

This sheet pan sausage & vegetables is the perfect dump-and-go one-pan meal for busy weeknights. With chicken sausage, carrots, broccoli and more, it's a balanced and nourishing meal that the whole family will enjoy.

Ingredients

  • 12 oz package chicken sausage chopped (I use this one)
  • 1 cup carrots chopped
  • 1 ½ cup brussels sprouts halved
  • 1 ½ cup broccoli florets
  • ½ yellow onion sliced
  • salt and pepper
  • 2 tsp garlic powder
  • 2 tbsp avocado oil
  • 1 tbsp red wine vinegar
  • 1 tbsp fresh chopped parsley

Instructions

  • Preheat the oven to 400 F and line a large baking sheet with parchment paper.
  • Add the vegetables and sausage to the baking pan, and top with avocado oil, salt and pepper, and garlic powder. Toss and make sure that everything is laying flat and nothing is overlapping so the vegetables and sausage can evenly roast.
  • Transfer to the oven and roast for 25-30 minutes, turning halfway through, until the vegetables are cooked to your liking. Add the red wine vinegar at the last 2-3 minutes and toss.
  • Remove from the oven and serve topped with chopped parsley.

Notes

You can also use balsamic vinegar instead of red wine vinegar. 
Swap out the vegetables for sweet potato, butternut squash, red onion, etc.
