These pickle ground chicken burgers are the ultimate summer burger for pickle lovers! They're made with ground chicken and diced pickles, for the perfect savory and tart flavor.
Using a large bowl, combine the ground chicken, diced pickles, pickle juice, coconut flour and seasonings. Mix well to fully incorporate and form into 4 burgers. Set aside.
Grease a grill or grill pan well and add the burgers for 4-5 minutes per side or until cooked through to 165 F. Remove from the grill and allow to rest.
You can serve the burgers in a bowl with extra pickles on top, and on buns topped with mayo, mustard, lettuce, sliced onion, and extra pickles!
Notes
I find that I always need coconut flour as I use previously frozen chicken and it has a lot more moisture! If you use a chicken that’s more dry, you may not need as much coconut flour.
