Ingredients

  • 1 lb ground chicken or turkey
  • ½ cup dill pickles diced
  • 2 tsp fresh dill chopped
  • 1 tbsp coconut flour
  • 2 tsp pickle juice
  • Salt and pepper
  • 1 tsp dried parsley
  • 2 tsp garlic powder
  • 1 tsp onion powder

To serve

  • Sliced pickles
  • GF buns
  • Green leaf lettuce
  • Sliced red onions
  • Mayo
  • Whole grain mustard

Instructions

  • Using a large bowl, combine the ground chicken, diced pickles, pickle juice, coconut flour and seasonings. Mix well to fully incorporate and form into 4 burgers. Set aside.
  • Grease a grill or grill pan well and add the burgers for 4-5 minutes per side or until cooked through to 165 F. Remove from the grill and allow to rest.
  • You can serve the burgers in a bowl with extra pickles on top, and on buns topped with mayo, mustard, lettuce, sliced onion, and extra pickles!

Notes

I find that I always need coconut flour as I use previously frozen chicken and it has a lot more moisture! If you use a chicken that’s more dry, you may not need as much coconut flour.
