Pickle Gummies

These pickle gummies are a pickle lover's dream snack! The pickle juice is a great source of electrolytes for a hydrating bite-sized snack.

Ingredients

  • 1 cup pickle juice for a milder flavor, use 1/2 cup pickle juice and 1/2 cup water
  • 2 ½ tbsp gelatin

Instructions

  • Add the pickle juice to a pot and sprinkle over the gelatin. Allow to sit for 5 minutes to harden.
  • For a milder flavor, use 1/2 cup pickle juice and 1/2 cup water.
  • Transfer to the stove and heat on medium-low for 2-3 minutes until the mixture returns to liquid. Remove from the heat. Slightly skim the top to remove any bubbles or foam from the vinegar.
  • Use a dropper to transfer the gummy mixture into a mold of your choice (like this). Alternatively, you can pour it into a glass container.
  • Allow to set in the fridge for a few hours or overnight before carefuly removing. Store in the fridge.
  • These gummies are great post-workout or for some quick electrolytes. Keep in mind that they are high in sodium and vinegar. I recommend having just a few at a time.

Notes

To get 1 cup of pickle juice, I strain a jar of pickles like grillos, or any other pickles that you like! 
If you prefer to balance the pickle flavor, use 1/2 cup water and 1/2 cup pickle juice for a milder flavor
