Protein Peach Rings

Ingredients

  • 2 cups sliced peaches i use previously frozen peaches that are defrosted
  • ¾ cup orange juice
  • 2 tbsp honey
  • 3 tbsp gelatin
  • 2 scoops unflavored protein powder like this
  • 2 tbsp granulated sweetener optional

Instructions

  • Add the peeled peaches to a blender or food processor along with the orange juice. Blend until fully liquid. Using a fine mesh strainer set over a medium pot, strain out the juice using a silicone spatula to push down the pulp. You should have about 1 1/4 cups of juice after straining.
  • Pour the juice into a pot and add the honey. Stir well. Sprinkle the gelatin and protein powder over the peach mixture and whisk to combine. Allow to set for a few minutes.
  • Transfer the pot to the stove and heat over low heat for 3-4 minutes or until liquid.
  • Use a dropper to carefully transfer the liquid into the mold. Alternatively, you can use a large glass container.
  • Transfer to the fridge for 4-6 hours or until fully set.
  • Carefully remove from the mold. After both sets of of gumdrops are hardened, carefully remove them from the molds and place on a wire rack. Raise the rack using two glasses and put a small fan next to the rack. Turn on low and allow to dry for 90 minutes- 2 hours.
  • Add the sweetener to a bowl and carefully toss the gummies (see notes). Store in the fridge!

Notes

What kind of peaches to use: I like to use frozen peaches that I defrost in the fridge! Canned peaches could also work. 
Drying process: Ideally, these peach rings should need to undergo a drying process for that chewy texture. If you don’t have a fan, you can set them at room temperature for 2 hours.
Storage: Store for a few days in the frdige in a glass container. Since they use real fruit, these need to be stored in the fridge, but this granulated sweetener will slowly liquify once placed in the fridge. If you plan to enjoy part of the gumdrop recipe for later, store them without sweetener in the fridge, and then dry and add sweetener to serve.
Vegan modification: To make this recipe vegan, you would swap out a vegan protein powder and gelatin for agar. Agar is a lot stronger than gelatin, so you need to divide the amount of gelatin by three, and then you’ll have the amount of agar needed! 
What to do with the pulp: The pulp is perfect to serve on top of yogurt bowls, oatmeal, or you can even add it to a smoothie!
