Gluten-Free Pigs In a Blanket

These gluten-free pigs in a blanket are the easiest that you'll ever make! The dough is gluten and grain-free, and doesn't need to be rolled out.

Ingredients

  • 1 ½ cup shredded goat cheddar cheese
  • 2 tbsp cream cheese sub dairy free cream cheese
  • 1 cup almond flour
  • 2 tsp arrowroot starch
  • ¼ cup pork panko
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt & pepper
  • 2 egg whites divided
  • 1 pacakge mini hot dogs
  • 1 tbsp everything bagel seasoning

Instructions

To make the dough

  • Preheat oven to 350 degrees F and line a large baking sheet with lightly greased parchment paper.
  • Combine the shredded cheese and cream cheese in a microwave safe bowl. Microwave for 2 minutes, in 30 second increments, stirring every 30 seconds. The cheese should be fully melted and lightly bubblly.
  • Add 1/2 cup of the almond flour, arrowroot starch, pork panko, and the seasonings. Stir well, and all the other 1/2 cup of almond flour. Stir well until the dough is thickened, but still soft and easy to handle.
  • Whip one of the egg whites well and add to the dough, stirring well to incorporate into the dough. Set aside

To assemble the pigs in a blanket

  • Pat the mini hot dogs dry. Scoop out about 1 tbsp of dough at a time and wrap it around the center of mini hot dogs, leaving the ends uncovered. Place on the baking sheet and repeat with all of the mini hot dogs, evenly spacing.
  • Using a brush, brush all of the pigs in a blanket with the other egg white. Sprinkle each one with bagel seasoning.
  • Transfer to the oven and bake for 18-20 minutes or until lightly golden brown.
  • Serve with ketchup and mustard on the side!

Notes

Adapted from.
This particular recipe is adapted from keto recipes, and it wouldn't work without regular cheese. However, you can use goat cheddar or mozzarella cheese for lower lactose!
