These gluten-free pigs in a blanket are the easiest that you’ll ever make! No need to get puff pastry! This is made with homemade dough that doesn’t need to be rolled out.

Pigs in a blanket are one of those nostalgic meals that I have such fond memories of! My five-year-old recently had pigs in a blanket for the first time, and loved it, so I knew it was finally time to tackle it myself! The pigs in a blanket that I grew up eating were either frozen or made with a canned crescent dough. I really wanted to make a version that was simpler, but still gluten-free.

These gluten-free pigs in a blanket couldn’t be easier! The dough is homemade and doesn’t need to be rolled out. Serve them with sweet potato smiley fries, and bask in the nostalgia!

Why you’ll love these GF Pigs in a Blanket

  • No need to find a GF puff pastry dough. This is a homemade dough, so you won’t have to go on a hunt to find a GF pastry dough at the store!
  • No rolling out the dough. Rolling out a gluten-free dough and cutting into the perfect little strips always feels like such a hassle. Gluten-free dough is finicky, crumbly, and it just takes forever to roll out. I developed this recipe so that you just have to press the dough around your mini hot dog. It’s so easy that even your kids can help you do it!

Recipe Ingredients

  • Mini Hot Dogs. This is the brand I use for my family!
  • Shredded cheese. I originally adapted this recipe from keto recipes after that’s what my son first tried and said he loved, so cheese was involved. My recipes are pretty dairy-free or dairy-optional, but this only really needs cheese. The good news is the exact kind of cheese is flexible. I use goat dairy for a lower lactose solution, and I’ve had success with both cheddar and mozzarella. However, I don’t think a vegan cheese would work.
  • Cream cheese.
  • Egg white.
  • Almond flour, arrowroot starch, and pork panko. Pork panko is essentially a panko made from pork rinds. It adds a great flavor to these!

Substitutions and Modifications

  • Whole hot dogs. These are the hot dogs I use for myself to make them nightshade free, just like I did with my Gluten Free Mini Corn Dog Muffins.
  • Cream cheese. You can use dairy-free cream cheese!
  • Tapioca starch. You can easily swap the arrowroot for tapioca.
  • Pork rinds. Pork panko is made from pork rinds, so you can also add pork rinds to a food processor to make your own pork panko!

How to Make Gluten-Free Pigs in a Blanket

Step one. Combine the shredded cheese and cream cheese.

Step two. Melt the cheese and cream cheese together.

Step three. Add the almond flour, pork panko and arrowroot starch into the cheese.

Step four. Stir well to make a dough.

Step five. Pat the mini hot dogs dry. Scoop out about 1 tbsp of dough at a time.

Step six. Wrap it around the center of mini hot dogs, leaving the ends uncovered.

Step eight. Bake and serve!

Ingredients
 

  • 1 ½ cup shredded goat cheddar cheese
  • 2 tbsp cream cheese, sub dairy free cream cheese
  • 1 cup almond flour
  • 2 tsp arrowroot starch
  • ¼ cup pork panko
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt & pepper
  • 2 egg whites, divided
  • 1 pacakge mini hot dogs
  • 1 tbsp everything bagel seasoning

Instructions
 

To make the dough

  • Preheat oven to 350 degrees F and line a large baking sheet with lightly greased parchment paper.
  • Combine the shredded cheese and cream cheese in a microwave safe bowl. Microwave for 2 minutes, in 30 second increments, stirring every 30 seconds. The cheese should be fully melted and lightly bubblly.
  • Add 1/2 cup of the almond flour, arrowroot starch, pork panko, and the seasonings. Stir well, and all the other 1/2 cup of almond flour. Stir well until the dough is thickened, but still soft and easy to handle.
  • Whip one of the egg whites well and add to the dough, stirring well to incorporate into the dough. Set aside

To assemble the pigs in a blanket

  • Pat the mini hot dogs dry. Scoop out about 1 tbsp of dough at a time and wrap it around the center of mini hot dogs, leaving the ends uncovered. Place on the baking sheet and repeat with all of the mini hot dogs, evenly spacing.
  • Using a brush, brush all of the pigs in a blanket with the other egg white. Sprinkle each one with bagel seasoning.
  • Transfer to the oven and bake for 18-20 minutes or until lightly golden brown.
  • Serve with ketchup and mustard on the side!
