Rice Paper Fried Pickles

These rice paper fried pickles are the perfect gluten-free alternative to this comfort food classic! They're made with just 3 ingredients in the air fryer.

Ingredients

  • 1 whole egg whisked
  • 5 pieces rice paper
  • 5 whole pickles I recommend baby pickles!

Instructions

    I recommend wearing food safe gloves while working with the egg dipped rice paper!
  • Using a shallow bowl, whisk the egg well. Working with one piece of rice paper at a time, submerge in the egg, and flip to coat both sides.
  • Transfer the rice paper to a clean plate and allow to sit for a minute to soften further.
  • Add a pickle to the center of the rice paper. Fold in the edges and roll the rice paper up around the pickle. Set aside and repeat with all of the pickles and rice paper.
  • Preheat the air fryer to 400 F. Carefully add vented parchment paper. Add the pickles and spray with oil
  • Make sure the pickles are arragned so they weigh down the parchment paper.
  • Cook for 5 minutes and carefully flip. Cook for another 5-7 minutes or until the rice paper is crisped to your liking.
  • Serve the pickles whole or slice in half on a bias. Serve with a dip of your, choice like ranch!
