For the GF Pizza Bagel

  • 1 gluten-free bagel (I use the Greater Knead)
  • 1/2 cup tomato sauce of choice (or nomato sauce)
  • 1/4 cup shredded cheese (sub-dairy-free cheese)
  • 34 mushrooms, sliced
  • Cooked ground beef
  • 2 tsp parsley, chopped

For the GF Sandwich

  • 2 slices paleo or gluten-free bread (I use AWG bakery for paleo bread)
  • 1/2 cup arugula
  • 2 tsp olive oil
  • 2 tsp balsamic vinegar
  • 1/4 tsp black pepper
  • 34 slices Proscuitto
  • 1/2 avocado, sliced

Instructions

For the GF Pizza Bagel

  1. Preheat the oven to 350 F and line a baking sheet with parchment paper.
  2. Assemble the bagel by topping with sauce, shredded cheese, mushroom, and cooked ground beef.
  3. Transfer to the preheated oven and cook for 5-8 minutes or until the bagel is soft and the cheese is melted. Serve topped with parsley.

For the GF Sandwich

  1. Lightly toast the bread using your preferred method.
  2. Dress the arugula with olive oil, balsamic vinegar, and pepper. Add to the sandwich along with Proscuitto, and avocado. Slice and serve later.
