For the GF Pizza Bagel
- 1 gluten-free bagel (I use the Greater Knead)
- 1/2 cup tomato sauce of choice (or nomato sauce)
- 1/4 cup shredded cheese (sub-dairy-free cheese)
- 3–4 mushrooms, sliced
- Cooked ground beef
- 2 tsp parsley, chopped
For the GF Sandwich
- 2 slices paleo or gluten-free bread (I use AWG bakery for paleo bread)
- 1/2 cup arugula
- 2 tsp olive oil
- 2 tsp balsamic vinegar
- 1/4 tsp black pepper
- 3–4 slices Proscuitto
- 1/2 avocado, sliced
Instructions
For the GF Pizza Bagel
- Preheat the oven to 350 F and line a baking sheet with parchment paper.
- Assemble the bagel by topping with sauce, shredded cheese, mushroom, and cooked ground beef.
- Transfer to the preheated oven and cook for 5-8 minutes or until the bagel is soft and the cheese is melted. Serve topped with parsley.
For the GF Sandwich
- Lightly toast the bread using your preferred method.
- Dress the arugula with olive oil, balsamic vinegar, and pepper. Add to the sandwich along with Proscuitto, and avocado. Slice and serve later.
