Why you’ll love these Gluten-Free Sheet Pan Pancakes

Whenever I need breakfast for a crowd, the last thing I want to do is stand in front of the stove for 30 minutes making individual pancakes. I’d much rather make a batch recipe like my protein breakfast biscuits, or these sheet pan pancakes!

This recipe saves me so much time, but I almost didn’t even bother sharing it because it’s so easy. I figured, “Well, it’s just so straightforward that it’s not really even a proper recipe, like I usually share.” But after I got several requests to share it on Instagram, I figured, what the heck is wrong with it being so easy? Isn’t that a selling point to keep coming back to it? So rather than letting it get lost in my social media feed, I figured I would give it a permanent home here on the blog so you can keep coming back to it for gatherings, holidays, and all of your meal prep breakfast needs!

  • Quick and easy! The only thing you need to do is mix the batter and bake… that’s it!
  • Perfect for batch cooking, or for feeding a crowd. You can easily use this recipe to feed the whole family on a holiday or vacation, and I also make this recipe for my son and then freeze portions for quick mornings. Just add some scrambled eggs or maple turkey breakfast sausage on the side, and you’re good to go!
  • Customizable. Add your preferred toppings or mix-ins to make it your own. You can add fruit, chocolate chips, or even protein powder to up the protein a bit.
  • Gluten- and dairy-free. No buttermilk and no flour!

  • Simple Mills Pancake Mix.
  • Eggs, almond milk & Greek-style yogurt. I love to add yogurt to the mix for some extra protein and a fluffy texture. I use a coconut Greek-style yogurt!

Step one. Mix the pancake batter.

Gluten-Free Sheet Pan Pancakes

These gluten-free sheet pan pancakes are the ultimate easy breakfast hack. Make them in bulk on one pan, and serve them throughout the week!

Ingredients
 

  • 4 whole eggs
  • cup milk
  • 1 tbsp avocado oil
  • 3 tbsp Greek style yogurt
  • 1 box Pancake Mix, I use Simple mills gluten free mix
  • Mixed berries, i use sliced strawberries & whole blueberries

Instructions
 

  • Preheat the oven to 350 F and line a large baking sheet with lightly greased parchment paper.
  • Whisk the eggs, almond milk, yogurt and oil together in a large bowl. Add the pancake mix and stir with a silicone spatula until a smooth batter forms.
  • Pour the prepared batter onto the baking sheet, using the spatula to evenly distribute. Top with berries of your choice and transfer to the preheated oven.
  • Bake for 15-18 minutes, or until lightly golden and baked through. Allow to cool before slicing and serving!

Notes

Add toppings of your choice like berries, bananas, chocolate chips, etc!
