It’s that time of year again, and my 6-year-old always comes home from school hungry! I try to have things on hand for him that are actually filling, give a boost of healthy fats and protein, and that he’ll actually still want to eat.

Coconut Froyo Bars

These coconut froyo bars are the perfect after-school snack to stash in your freezer! It's made with cocojune vanilla Greek-style coconut yogurt for a boost of dairy-free protein!

  • Combine the yogurt, nut butter & berries. Whip until smooth.
  • Line a baking sheet with parchment paper. Use an ice cream scoop to scoop 4 even amounts of the yogurt onto the sheet, using a spoon to form into disks. Insert popsicle sticks. Freeze until solid!
  • Melt the chocolate and coconut oil together in 30 seconds increments in the microwave.
  • Drizzle the chocolate over the frozen bars and rotate to fully coat. Top with chopped nuts (if desired) and flakey salt.
  • Return to the freezer for about 30 minutes to set before enjoying! Store in the freezer and serve as an after school snack.
