Coconut Froyo Bars

Ingredients
- 2 cups cocojune vanilla Greek-style coconut yogurt
- 1 tbsp almond butter
- ½ cup strawberries, diced
- ½ cup dairy-free chocolate chips
- 1 tbsp coconut oil
- Chopped nuts & flakey salt
Instructions
- Combine the yogurt, nut butter & berries. Whip until smooth.
- Line a baking sheet with parchment paper. Use an ice cream scoop to scoop 4 even amounts of the yogurt onto the sheet, using a spoon to form into disks. Insert popsicle sticks. Freeze until solid!
- Melt the chocolate and coconut oil together in 30 seconds increments in the microwave.
- Drizzle the chocolate over the frozen bars and rotate to fully coat. Top with chopped nuts (if desired) and flakey salt.
- Return to the freezer for about 30 minutes to set before enjoying! Store in the freezer and serve as an after school snack.
